Executive Chef James Jennings describes his cuisine as Nouvelle with traditional touches. Influenced greatly by Wigamog’s previous chefs, Venezuelan born Carlos Fuenmayor and Stephanie Ortenz, James learned the finer points of classical French and Italian cooking techniques.

Challenges result from change, explains Chef James. Seasons bring different products, and different menus must be made to suit different occasions. Catering to various needs of guests generates the need for creativity, the menu for a corporate functions and weddings will differ from an intimate dinner preparations for couples, a family meal or a winemaker’s dinner.

Always interested in acquiring more knowledge and meeting new challenges both personally and professionally, Chef James has learned that variety is the spice of life and he looks forward to the opportunities that each day brings.
